Christmastime Sugar Cookies

It wouldn't be a Christmas party without a batch of sugar cookies. This dough makes a firm but soft cookie perfect for icing. Shape it using your favorite cutters, and for any holiday.

You will need:
1 quart-sized mason jar
2 1/2 cups all-purpose flour
1/2 teaspoon salt
1/4 cup cornstarch
3/4 cups powdered sugar
1/2 teaspoon baking soda

Combine all of these ingredients in a mixing bowl, then pour into a quart sized mason jar. I've found that this recipe works best when mixed as opposed to layered; powdered sugar can harden and become difficult to remove from the jar! 

There should be enough room left in the top of the jar for you to also include a small bag of edible decorations that your recipients can use to decorate the cookies as well. Just be sure to check the ingredients on the decorations you choose; animal ingredients are often hidden with names like "confectioner's glaze" which sometimes contains honey.

Their instructions:
Pour contents into a large mixing bowl. Add 1/2 cup softened or melted vegan margarine, 1/2 cup vegetable shortening, 1 tablespoon vanilla, and 1/4 cup non-dairy milk. Mix well with a spoon or electric mixer, then with your hands if needed. Refrigerate for 1 hour prior to flattening with a rolling pin and cutting into shapes. Bake at 350 degrees for 8-10 minutes. Decorate with your favorite icing!
